This village Puligny comes from old, densely planted vines on gentle east-facing slopes of around 3% gradient, on deep, stony clay and limestone; morning sun builds complexity while cool nights keep the acidity. The vineyards are sustainably farmed with local compost, copper and sulphur only, and mechanical ploughing, and the grapes are hand-picked. The juice was pressed straight away, settled for 24 hours and moved by gravity to 228-litre French barriques for a wild-yeast fermentation below 23°C, then matured 12 months on its lees in 60% new oak without bâtonnage.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, rich and creamy dishes and poultry and pork.
