Roasted Slope — the literal translation of Côte-Rôtie — exists because of a nursery mistake in 1996 that inter-planted a Syrah vineyard with around 8% Viognier; rather than pull it out, he co-ferments the two just as they do in the northern Rhône. Santa Barbara County's transverse mountain ranges funnel cold Pacific wind across the sandy, gravelly ancient sea-bed soils, and the cordon-pruned vines are farmed to organic and biodynamic principles under SIP sustainability certification, all hand-harvested. The fruit was fermented part whole-cluster in small open vats with the Viognier added as whole bunches, punched down by hand no more than twice a day, then aged 18 months in barrel where malolactic happened naturally.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with roast lamb, peppered steak, duck and grilled aubergine. Drinking well now with five to ten years ahead; decant for an hour. Serve at 16–18°C.
