Renaissance was born in 2014 when brothers Benoît and Matthieu Fleuriet stepped in to help their friend Stéphane Marchand, who could no longer keep up his 7 hectares on some of Sancerre's finest slopes; they replanted and converted to certified organic farming, with biodynamic certification in progress, and the name marks that revival. Côte de l'Épée is a single south-facing vineyard at 250 metres, vines averaging 50 years old at 8,000–10,000 per hectare on Terres Blanches over limestone, worked by hand and picked by hand at 40–45 hl\/ha. The grapes are pressed slowly, fermented with indigenous yeasts in steel at 18–23°C under nitrogen, then refined 10–15 months on fine lees in terracotta amphorae in a gravity-fed winery.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with goat's cheese, grilled river fish, asparagus and roast chicken.
