Pinot Noir 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eAntoine Olivier was founded at the end of the 1960s on a handful of vineyards left by Antoine Chevalier Moreau to Herve Olivier, who extended the estate by buying back historic Santenay parcels, some unworked for close to a century. The estate is run today by Antoine Olivier and daughter Jade, farmed organically though without certification, with biodynamic sprays alongside. Les Charmes is a 0.3-hectare plot at the foot of the slope in Santenay, on iron-rich clay-limestone over a limestone base, hand-picked and sorted. Fermentation used whole clusters and natural yeasts with no punching down of the cap, followed by twelve months entirely in barrel, a third new, a third second-fill and a third third-fill, then six months resting in tank before bottling without fining or filtration.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16C. Roast chicken, duck breast, mushroom risotto and soft washed-rind cheeses all suit. Drinking well now and on to around 2031, with an hour in a decanter helping a young bottle open.
