The fruit comes from two calcareous, rocky sites in Gualtallary, Tupungato, at 1,400 to 1,470 metres above sea level. Syrah and Viognier were co-fermented with wild yeasts, macerated on the skins for 20 days, then matured for 16 months in a mix of foudres, stainless steel and oak barrels. The vineyard is farmed organically without certification, and the winery holds a sustainability certification from Bodegas de Argentina.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003ePair with peppered steak, lamb shoulder, chorizo or roasted aubergine.
