The land around the manor house was once part of the bed of the river Minho and has clay-sand soils that hold moisture through warm summers, while the vineyards in the S. Marcos hills sit on sandy soils of granitic origin. The hand-picked grapes were lightly pressed and fermented with selected yeasts in stainless steel at 15 to 18°C, with no oak at any stage, to keep the variety's freshness and aromatics intact.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8 to 10°C.
