Since its founding in 2000 the estate has replanted heavily and become one of the leading names in the revival of talha, the local tradition of fermenting in clay pots. The fruit for this wine comes from very old vineyards of ancient native varieties on granitic and schistous soils along the Vidigueira fault, a thirty-mile escarpment rising to 420 metres that traps cool, humid Atlantic air and opens up diurnal swings of 15°C, making this one of the most temperate corners of the Alentejo. The hand-picked grapes were fermented with indigenous yeasts in talha with no additions, corrections or temperature control, then aged six months on their skins, which can leave a natural deposit in the bottle.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 14 to 16°C, a little cooler than a standard red. Grilled pork, roast chicken, a tomato-based pasta or a plate of cured Alentejo cheese all suit it. Drinking now and over the next three to five years; no decanting, though the natural deposit is worth pouring around.
