For this wine, Barbera is picked by hand from sandy, dry, mineral-rich sites on the north bank of the Tanaro river, a slightly cooler area than the Langhe, and dried in stacked wooden baskets in a fruit shed to concentrate the sugars in the appassimento method. After drying, the grapes are crushed and fermented in stainless steel at 28-30°C with two weeks on the skins and daily pump-overs; 30% of the wine then spends six months in second-use French oak tonneaux.
