Barbera 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eMichele Chiarlo is one of Piedmont's best-known estates, founded in 1956 by the man himself and now run by his sons Alberto and Stefano, with holdings that take in the Cannubi and Cerequio vineyards in Barolo; the estate's vineyards are sustainably cultivated and hold Equalitas certification, and in 2025 Chiarlo was named European Producer of the Year at the Sommelier Wine Awards. Palás comes from vineyards in the southern part of Asti, where the soil is clay and limestone with a good sand content, planted on easterly to south-easterly slopes, Guyot trained and picked by hand at optimum maturity. Fermentation took place in temperature-controlled stainless steel with ten days of maceration on the skins, the cap kept wet by a gentle shower system at 16-18°C; after malolactic conversion the wine stayed in stainless steel for at least eight months, which is what keeps the fruit so direct.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe lightly chilled, at 14-16°C.
