The Pinot Noir blocks sit at 280 metres on clay loam over 450-million-year-old Bokkeveld shale, cooled by breezes off the Atlantic's Benguela current. Half the fruit was fermented as whole bunches in large foudres, and the wine spent 12 months in French oak, a quarter of it new. The farm uses organic fertilisers, cover crops and mechanical weeding rather than herbicides, and is a WWF Conservation Champion.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eDuck breast, roast guinea fowl, seared tuna or a mushroom and truffle pasta. Lovely now with an hour in a decanter, and will reward five to eight years in the cellar. Serve at 15 to 17°C.
