Dolcetto 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eCosta di Bussia has been owned and run by the Sartirano family since 1988, on the Bussia slope near the village of Monforte d'Alba, and holds SQNPI certification covering phytosanitary practice, irrigation and full traceability of the fruit; the estate takes in fifteen hectares of the Campo dei Buoi and Campo del Gatto vineyards. The Dolcetto comes from a single south-east facing plot of 0.83 hectares, planted between 2000 and 2007, Guyot trained and held to a maximum of 90 quintals, on soils that shift between marl-clay and sandstone-marl within the same sub-zone. The grapes were fermented with selected yeasts in stainless steel at 24-25°C over five days, went through malolactic conversion to soften the palate, and rested six months in tank before bottling, with no oak at any point.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe lightly chilled, at 14-16°C. Good with cured meats, mushroom risotto, sausage with lentils, or a mild washed-rind cheese. Drink over the next two to three years, while the fruit is at its freshest. No decanting needed.
