The Dão lies in a basin ringed by the Caramulo, Montemuro, Buçaco and Estrela mountains, and the white varieties are planted on terraced slopes between 200 and 700 metres on lean, free-draining granite sands flecked with feldspar, quartz and mica; diurnal swings of up to 20°C preserve the acidity the region is known for. The hand-harvested grapes were destemmed, gently pressed and the juice settled for 48 hours at 10°C before a three-week fermentation at 16°C in stainless steel, with part of the must fermented and aged in barrel and a light bâtonnage carried out in both vat and barrel.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10 to 12°C.
