Chardonnay 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eThierry Drouin is based in Vergisson, between the landmark rocks of Vergisson and Solutré-Pouilly, and has worked the Pouilly-Fuissé, Saint-Véran and Mâcon appellations since founding the estate in the 1980s; son Charles-Edouard took over as winemaker when Thierry retired in 2021. Le Vieux Puits is a single vineyard on a north-facing slope at 200 metres, on limestone-rich alkaline soils, Guyot-pruned and green-harvested to keep yields low, with grass cover left in every other row for biodiversity. The grapes were gravity-fed and slowly pressed, then fermented half in stainless steel with selected organic yeasts and half in French oak barrels, 10% of them new, with natural yeasts; lees stirring built texture and the wine aged seven months in tank and barrel before a further two months on lees in steel.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C. Roast chicken, grilled sea bass, pork with a creamy mustard sauce, or a young Comté. Drinking well now and over the next two to three years, and it needs no decanting. Sealed with a DIAM closure.
