This wine comes from ungrafted, low-yielding vines planted in the early 1970s at Allen and Ingeniero Huergo in Rio Negro, Patagonia, roughly halfway between the Andes and the Atlantic, where intense sunlight and cold nights at 39° south stretch out the ripening season. Bastardo is Trousseau under another name, a dark-skinned variety from the Jura. The vines are farmed on organic principles and picked by hand; 30% whole bunches go into small French oak vats with indigenous yeasts at 26–28°C, and the wine spends eight months in French oak before bottling without fining or filtration.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with poultry and pork, risotto and cheese.
