The vineyard mixes younger espalier vines with 35-100-year-old plants, some pre-phylloxera, farmed on organic and biodynamic principles without pesticides, herbicides or irrigation. Winemaker Maria Jose Yravedra works in a gravity-fed cellar: a cold pre-fermentation soak at 10°C, rack-and-return to soften tannins, wild-yeast fermentation in 5,000-litre French oak foudres, then eight months' ageing in the same foudres before a light fining and filtration.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eBright and savoury enough for grilled pork, duck, empanadas, charcuterie and chorizo, or roast vegetables with smoked paprika.
