Mouhtaro is a red grape grown only around Askri at the foot of Mount Helicon, and Athanasios brought it back from near-extinction to make the first vintage in 1998. The vines grow at 450–550 metres on sandy to clay loam, oriented north to south, cooled by air sliding down from Helicon and tempered by the Permisos river, farmed under integrated agriculture and picked by hand. The house method is a four-day cold soak, a 20-day wild-yeast fermentation and a further ten days' maceration, then 12 months in 225- and 300-litre French oak, 20% new.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with lamb kleftiko, grilled pork, aubergine dishes and hard cheeses.
