This Mtsvane (the name means 'green', for the grape's yellow-green skin) comes from a Kakheti vineyard at 350 metres, on clay-loam soils that hold water through the hot summers, with cover grass between the rows and organic mineral fertilisers. Winemaker Vladimer Kublashvili sorted the fruit and fermented it in stainless steel at a cool 16°C for two weeks to keep the fruit and varietal character intact.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eChill to 8–10°C and pour with grilled fish, khachapuri or any cheese-laden bread, chicken with herbs, or a green salad; no decanting needed.
