The Nero d'Avola comes from hillside vineyards overlooking the Mediterranean, at anything from sea level to 700 metres, hand-picked into small 20-kilogram crates. The grapes spend 12 hours on skins in temperature-controlled steel, followed by a cool 12 to 15 day fermentation at 16-18°C to preserve the variety's aromatics.
