Obeidy is Lebanon's own indigenous white grape, once destined for arak and now emerging as a serious varietal wine; here it grows on cool calcareous clay with a 20°C swing between day and night that keeps acidity fresh through the long ripening season. The grapes were hand-picked, each variety fermented separately in stainless steel at 14–16°C without malolactic conversion, then blended and lightly filtered.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eMade for mezze: hummus, tabbouleh, grilled halloumi, fattoush, and grilled fish or chicken with lemon and herbs.
