Pinot Noir 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eParinga Estate sits in the heart of Victoria's Mornington Peninsula, founded in 1984 when Lindsay McCall bought a derelict orchard; the first vintage came in 1988 from just three tonnes of fruit, production now runs to 16,000 cases, and Lindsay and Jamie McCall make the wines. This is the regional bottling: roughly 60% of the fruit comes from estate-managed Pinot Noir blocks and the remaining 40% from a small group of carefully selected contract growers, drawn deliberately from both the warmer sites in the lower part of the region and cooler ones at higher altitude so the blend gains layers rather than a single note. The grapes were fully destemmed and carefully selected, then fermented in two-tonne open fermenters with an average of 21 days on skins to draw out aroma, colour, flavour and structure, after which the wine matured on its lees in French oak barrels for 11 months, rounding the tannins and adding texture and complexity.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 14-16°C.
