Vines have been grown here for centuries, the Stipančić vineyard dates to the fifteenth century, but most needed replanting or restoring, and winemaker Rikard Petric now works old, dry-farmed vines on rocky limestone, pruned hard to keep yields low and picked by hand. Sea breezes, windy sunny days and cool nights give a long ripening that keeps the acidity. The grapes are chilled and protected from oxygen; two-thirds are pressed straight away and a third macerates on skins for six hours, then 80% ferments in stainless steel and 20% in wooden vats for a touch of complexity before six months in tank.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with grilled fish, shellfish, salads and lighter poultry and pork dishes.
