The estate holds three plots in Savennières, and this wine comes from 1.5 hectares in the cru of Le Moulin du Gué, on the schist and carboniferous soils that mark the finest parcels of the appellation; the schist retains heat and pushes ripening in a cool northern climate, and yields run at 35 hl\/ha. The rows are grassed, green-harvested and summer-thinned to expose the fruit, and the harvest is picked in three passes so only the ripest grapes are taken. Each parcel was pressed and settled separately, fermented slowly with selected yeasts in barrel with a partial malolactic conversion to round the palate, and matured on fine lees in 400-litre barrels before a cross-flow filtration that keeps sulphur levels low.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10–12°C. Good with roast chicken, turbot in a butter sauce, slow-cooked pork belly and a mature Comté. Drink over the next five to ten years; half an hour in a decanter opens it up. Sealed under DIAM.
