The estate lies on the cool-climate slopes of Mount Pangeon at Kokkinochori near Kavala, 380 metres up and running to 78 hectares of rocky, infertile limestone and clay with good drainage, facing the Aegean; the vineyard was planted in 1998, has been farmed organically since and is certified organic, with leaf thinning and picking done by hand, and the winery followed in 2001. Tsaktsarlis studied with Denis Dubourdieu, the figure behind modern white Graves, and the Bordeaux habit shows in the cellar: Assyrtiko and Semillon were picked at optimum maturity and vinified separately in 225-litre French oak barrels, half of them new and half a year old, then matured five months in barrel with bâtonnage.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C.
