This comes from vines averaging 15 years old at 1,100 to 1,400 metres in the Uco Valley, on rocky limestone soils where warm days and cold nights stretch the ripening and hold the acidity; the vineyard is moving towards organic management and the fruit is hand-picked. Half was fermented as whole bunches and half destemmed, with natural yeasts and twice-daily punch-downs, then aged in small concrete vats to keep the fruit pure and bottled unfined and unfiltered. The name is the argument: a deliberately fresh Malbec made against the plush, oaky style the grape became famous for.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with red meat, spicy dishes and cheese.
