Tinto de la Casa is the house red: a co-fermentation of Malbec from two sites, half from Las Compuertas at 1,100 metres on a metre of loamy clay over rocky subsoil, half from Gualtallary at 1,400 metres on calcareous soil, where thicker skins and cooler nights give freshness and a spicy edge. Four-fifths of the fruit goes in as whole bunches for extra complexity from the stalks, fermented with wild yeasts in small French oak vats at 26–28°C with the cap punched down twice a day, and the wine stays in the same vats until the following harvest.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with steak, empanadas, chorizo and hard cheeses.
