Coral do Mar comes from a single vineyard on granite and sandy soils about 150 metres above the Atlantic, trained on trellis for better airflow and even ripening. Winemaker Manuel Mendez had the hand-picked grapes chilled to 8°C, cold-macerated briefly on the skins, then fermented cool in stainless steel for three to four weeks; malolactic conversion was blocked to keep the wine crisp.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eThe Galician classic is seafood, and it delivers: grilled octopus, razor clams, prawns with garlic, or a simple piece of hake.
