Aglianico 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eFeudi di San Gregorio has been one of the main protagonists in the renaissance of southern Italian wine, building a reputation for world-class bottles in under 30 years from a start in the mid-1980s, with the aim of safeguarding local traditions and unlocking indigenous grapes such as Fiano, Greco, Falanghina and Aglianico. It took B Corporation certification in 2021, along with the Equalitas certification covering biodiversity, carbon and water footprint and ecological practice, and in 2024 received The Old Vine Hero Award for Research for 'The Patriarchs', its study and catalogue of century-old Aglianico vines in Taurasi. The Aglianico for this rosato comes from hillside vineyards up to 700 metres in the Apennine terroir of Irpinia, near the Picentini Mountains, where the climate is continental and cool, winters are brief, snowy and cold and summers warm and prolonged; the Guyot-trained vines, around 20 years old, grow in marl and calcareous soils on well-ventilated hills with good sun exposure, are farmed without pesticides and are picked by hand. At the winery the grapes were gently pressed to take only the noblest part of the juice, fermented with selected yeasts in temperature-controlled stainless steel to keep the fruit pure, then matured four months in stainless steel, the wine made in collaboration with the French winemaker Valérie Lavigne.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8–10°C. It works with grilled octopus, tomato bruschetta, spaghetti alle vongole and young pecorino. Drink over the next two to three years, while it is fresh; no decanting needed.
