Clairette 30%, Grenache Blanc 30%, Roussanne 25%, Bourboulenc 15%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eWine has been made on this estate for several hundred years, since the Lançon family arrived from Italy in 1264 to serve the pope in Avignon; the three hats on the label stand for two bishops and a pope among their forebears, and the 38-hectare domaine is run today by Florent Lançon. This white is an historical cuvée, made since the seventeenth century from Grenache Blanc on the Crau plateau and Clairette, Roussanne, Bourboulenc and Picpoul from the Vallon de la Solitude, on ground strewn with rounded quartzite stones that hold the day's heat. Picking is by hand in the early morning into 25-kilogram crates, with the bunches sorted before a short skin maceration and pressing; the Roussanne and Grenache Blanc were fermented and aged in French oak and the Roussanne taken through malolactic conversion, while the Clairette, Bourboulenc and Picpoul were co-fermented in vat. Ageing on fine lees ran for ten months, 35% in barrel, 30% in foudre, 30% in concrete and 5% in new oak.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C, in a decent-sized glass rather than a small one. It works with roast chicken, turbot or monkfish in a butter sauce, pork with apple, and creamy gratins. Drinking well now and over the next five to ten years, and a half-hour in a decanter suits it while young.
