The vineyards spread over the gentle hills of Sorbo Serpico, an hour from Naples and Vesuvius, on volcanic, sandstone and marl soils, each block monitored by its own weather station and farmed without pesticides or inter-row weeding under the Equalitas sustainability standard; the estate has been B Corp certified since 2021. Winemaker Pierpaolo Sirch picks at optimal ripeness, ferments in stainless steel at 16–18°C to keep the aromatics, and leaves the wine five months on its lees in tank for texture.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, salads and poultry and pork.
