Serrocielo belongs to the estate's Selezione range, drawn from vineyards on volcanic, sandstone and marl soils where pesticides are not used and the ground between the rows is left unweeded to keep the soil healthy. The fruit was fermented in stainless steel at 16 to 18°C, then rested five to six months on its fine lees in steel with regular bâtonnage to build complexity and texture.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8 to 10°C.
