The palate is soft yet fresh, building to a vibrant, spicy, mineral finish that lingers — 100% Fiano.

The producer

Feudi di San Gregorio started in the mid-1980s to champion Campania's native grapes, Fiano, Greco, Falanghina and Aglianico, and is now one of the leading names in southern Italian wine. The vineyards lie on volcanic, sandstone and marl soils in the hills of Sorbo Serpico, about an hour from Naples, each block tracked by its own weather station. The estate is B Corp certified (2021) and holds the Equalitas sustainability standard; no pesticides are used and grass is left to grow between the rows. Winemaker Pierpaolo Sirch fermented the fruit cool in stainless steel at 16–18°C, then left the wine five months on its fine lees for texture.

Food and drinking

Excellent with grilled sea bass, seafood risotto, roast chicken with lemon, or buffalo mozzarella and tomatoes. Fiano ages well: drink now or over the next four to five years as honeyed notes develop. Serve at 8–10°C; DIAM closure, no decanting.
