The estate sits in the Alessandria province, in the Alto Monferrato, across a patchwork of red clay, white soils, marl and alluvial land; within the Gavi commune the ground is detritus-based and mixed through with sand and silt, the proximity of the sea and the Libeccio wind keep the fruit fresh, and the tuffaceous soil supplies the minerality. The grapes for this bottling come from young vineyards in the heart of Rovereto, the part of the commune known as the Gran Crù of Gavi, trained by Guyot and cordon spur under the rules of the Gavi DOCG; the estate holds SQNPI certification and farms with natural fertilisers and copper sulphate rather than chemical products. The grapes were gently pressed and the must fermented sur lie with wild yeasts at cool temperatures in stainless steel, then aged for an extended period on its lees without any oak, with clarity reached by natural sedimentation.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8-10°C.
