The Cortese for this wine grows on the hills around the town of Gavi itself, not far from the Ligurian coast, on soils full of marl and fossils, which is where the name Fossili comes from. Winemaker Marco Martino pressed the grapes gently, fermented cool in stainless steel for ten days, and left the wine six months on its fine lees for a little extra texture. The family's vineyards hold the Equalitas sustainability certification.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eThe classic Ligurian pairing is pesto and seafood, and it is hard to beat: try it with linguine alle vongole, grilled prawns, a summer salad or fresh goat's cheese.
