The Cortese for this wine grows on hillsides around the town of Gavi, in the Alessandria area, where marl and fossil-rich soils and wide day-to-night temperature swings build acidity and aromatic detail, and the fruit is picked by hand at optimal phenolic ripeness. The grapes were gently pressed and fermented in stainless steel at controlled temperatures, then the wine rested in tank on its fine lees to gain texture before bottling.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8-10°C.
