Its 10-hectare vineyard, planted in the early 1980s to Godello and Mencía, is one of the oldest in the appellation: sandy, quartz-rich soils bounce the sun back onto the fruit, at 400–500 metres in Galicia's driest and sunniest zone, with Atlantic-cooled autumns to slow ripening. The grapes had an eight-hour cold maceration, then fermented with natural yeasts in stainless steel and rested on fine lees for four months before cold stabilisation, filtering and bottling.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eMade for Galician-style seafood: grilled octopus, prawns with garlic, hake, or a plate of oysters; it also suits roast chicken and herby salads.
