The vines sit in the foothills of the Séranne and Mont Saint-Baudille, among olive trees, in the UNESCO-listed IGP Saint-Guilhem-le-Désert: hot, dry and Mediterranean, tempered by sea breezes, on clay-limestone that holds water through the summer. Butterfly sexual confusion replaces insecticides, and the grapes are picked in the cool of the night. Winemaker Katerina Gkountara cool-macerates the fruit in the press, ferments in concrete at 16°C and ages the wine four months on its fine lees with weekly bâtonnage, with no oak at all.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, salads and poultry and pork.
