The Turtles vineyard, named for the local turtle population that nests there, sits at 620 to 710 metres on sandy soils over limestone; the grapes are hand-picked into 15-kilogram baskets. After a cold soak on the skins the must was fermented in temperature-controlled stainless steel and kept on its fine lees for two months with regular stirring.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eTry it with grilled prawns, sea bream, herby salads, feta and lightly spiced dishes. Best over the next two to three years; no decanting. Serve chilled at 8–10°C. Sealed with DIAM, it is made to be enjoyed young.
