Nivole comes from south-east and south-west facing Guyot-trained vines in the historic Moscato heartland of Monferrato, on chalky marine sediments, and is picked by hand. The must is held cold, then slowly fermented in sealed stainless-steel autoclaves under winemakers Stefano Chiarlo and Gianni Meleni until it reaches 5% alcohol, trapping a gentle natural fizz; chilling to 0°C stops the ferment and keeps the grape's own sweetness, before a fine filtration.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe well chilled at 6–8°C with fruit tarts, panettone, pavlova or a plate of fresh berries, or alongside a soft blue cheese; it is also a lovely low-alcohol aperitif. No decanting, and no waiting: under screwcap it is made to be drunk young and fresh, within a year or two.
