Pecorello is a thick-skinned, mid-to-late ripening local grape; here it comes from the Feudo and Difesa Piana vineyards close to the beach, on deep alluvial and sandy loam soils cooled by coastal breezes, farmed on organic and sustainable principles and picked by hand in early September. Winemakers Gianluca Ippolito and Giovanni Dimastrogiovanni chill the fruit before a gentle pressing, cold-settle the must and ferment it for three weeks in stainless steel, then rest it four to five months, unoaked, so the variety speaks for itself. Pecorello means ‘sheep’ in Italian, hence the black sheep on the label.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, salads and poultry and pork.
