Pinot Noir 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eYering Station was the first vineyard planted in the state of Victoria, begun when the Scottish-born Ryrie brothers put vines in the ground in 1838, and it remains one of the Yarra Valley's landmark estates. The valley sits 45 kilometres east of Melbourne and is cooled by the Great Dividing Range, with vineyard elevation running anywhere from 50 to 1,250 metres; the MV6 and D5V12 Pinot Noir vines here are 15 to 25 years old, cane-pruned and VSP-trained on duplex grey loam over yellow clay, and the team maps soil and canopy with EM38 technology to isolate the best blocks and rows before hand-picking. Fermentation ran with selected yeast in open fermenters with ten days of skin contact, after which the wine was racked to French oak barrels ranging from new to eight years old, where it went through full malolactic conversion and ten months of maturation.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 14-16°C. Good with roast duck, mushroom risotto, glazed pork belly or a soft washed-rind cheese. Drinking well now and over the next three years; no decanting needed. Sealed with a screwcap.
