Enchanted by Loire Sauvignon Blanc, they settled in Touraine in 1996 and now work a range of terroirs across Loire Valley appellations; Patrice Merceron, winemaker and agricultural engineer, joined in 2014. The Pouilly-Fumé vineyard looks out over the river from the right bank, catching intense light and mild temperatures, and is farmed without synthetic products to protect the microbiology of the soils, with yields held down by the mixed ages and origins of the plantings. The grapes were gently pressed in a pneumatic press straight after picking to limit skin contact, fermented with selected yeasts in temperature-controlled stainless steel over seven to fifteen days, then held on fine lees in tank for at least six months for volume and texture, and bottled the following spring.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8-10°C. It goes with grilled sea bass, smoked salmon, goat's cheese and a lightly dressed green salad. Drink over the next three to five years; no decanting needed. Sealed with a technical cork.
