The vines are 20 years old, grown on 'ponca', the local sandstone and marl soil, on a south-facing site at 100 metres that gets drying breezes from the Adriatic. The grapes were picked in the second half of September, given a six-hour cold maceration, fermented in stainless steel at 15°C and kept in steel until the spring to hold on to the freshness.
