This Riesling comes from a section of the famed Florita vineyard at Watervale, where south- and east-facing slopes shelter the vines from hot northerly winds and cool nights keep the natural acidity crisp. The grapes were picked at night, pressed straight away without skin contact, and fermented cool at 14–16°C for two to three weeks so the wine speaks of its site rather than the winery.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eA natural match for fresh seafood, Thai and Vietnamese dishes, and anything with lime and herbs; it also handles goat's cheese well. Delicious now and for the next three to five years, served well chilled at 6–8°C; under screwcap, so no decanting needed.
