The Saint-Véran vines stand above the village of Solutré-Pouilly on east and south-east facing slopes at 250 to 300 metres, averaging fifty years old, rooted in Jurassic clay and chalk. Grapes were hand-harvested and sorted, pressed pneumatically and fermented with wild yeast in stainless steel at low temperature; the wine was made without oak, then racked, blended and bottled to hold its freshness. The estate is certified Haute Valeur Environnementale Level 3.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C.
