Sangiovese 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eUmberto Cesari and his wife Giuliana started the company in Emilia Romagna in 1965, buying twenty hectares of hillside land with the ambition of turning Sangiovese into a great wine; the estate now runs to 355 hectares across eight named vineyards, is certified sustainable by SQNPI, and is in the hands of their son Gianmaria, having been named IWSC Italian Winemaker of the Year four times in the last fifteen years. The Sangiovese for this wine comes from the Podere Parolino single vineyard in IGT Rubicone, where vines of around ten years, trained on the Guyot system, sit on clay-rich sedimentary soils heavily eroded by wind and water. The bunches were gently pressed and the juice kept in contact with the skins for less than an hour to draw the pale antique-pink colour, clarified by gravity, fermented cool with selected yeasts and matured in stainless steel.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8-10°C.
