The Collio is a strip of hills on the Slovenian border with one of Europe's better micro-climates for white wine, and the vines for this bottling sit in San Floriano del Collio, Cormons and Gorizia on the local 'Ponca' soils, sandstone layered with marl, planted at 5,000 vines per hectare; sea breezes off the Adriatic keep the fruit dry and healthy while the Alps block the cold northerly winds. The grapes had a night of low-temperature skin contact before gentle pressing, fermented over about two weeks in temperature-controlled stainless steel, and the wine stayed on its fine lees until maturation was complete.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8-10C.
