The grapes come from old vines of native varieties around Plataea, a small village at the foot of Mount Kithairon, at 250–320 metres where cool air drains off the mountain overnight. Everything in the vineyard is done by hand, yields are kept low and picking happens at night to hold on to aroma and acidity. Each variety was vinified separately after six hours of cold skin contact, then blended and kept in stainless steel on the fine lees for ten months with regular bâtonnage for texture.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eTry it with grilled fish and lemon, prawns, roast chicken with herbs, or a feta-heavy salad; it has enough weight for creamy pasta too. Drink over the next three years or so, served at 8–10°C, slightly warmer than a light white so the texture shows; DIAM closure, no decanting needed.
