Rey Santo comes from estate vines on gravelly, pebbly soils where a continental climate drops night temperatures by up to 20 degrees, locking in the acidity Verdejo is known for; yields are kept low by severe winter pruning and crop thinning, and the vineyards are in conversion to organic certification. Winemaker Santiago de Iscar harvested at night, destemmed and pressed gently, then ran a long, slow fermentation in stainless steel below 15°C for up to four weeks to hold on to the aromatics.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eGrilled sea bass, garlic prawns, asparagus, goat's cheese salad or a plate of jamón and Manchego.
