Founded in 1914 and owned by the Gilet family, winegrowers for five generations, it is farmed today by Jean-Marc Gilet across 27 hectares certified organic by Ecocert; beneath the estate the family has carved an 800-square-metre two-storey cellar out of freestone over many generations. Les Calcaires is a single vineyard on Turonian limestone hillsides covered in perruche, a flinty clay that lends elegance, worked without synthetic or chemical preparations. The grapes were harvested at optimum ripeness and carefully sorted, then vinified plot by plot to keep the nuances of the terroir, fermenting at low temperature in stainless steel to hold on to the freshness and purity of the fruit.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 8–10°C.
