Xinomavro is northern Greece's great native red, here from a single vineyard in the Hedgehog subregion of the Amyndeon Plateau at 690 metres, facing north towards Lake Petron and Voras Mountain on sandy, sandy-clay soils over limestone. The hand-picked grapes were destemmed, optically sorted and lightly crushed for a two-hour cold soak, with the rosé drawn off by the saignée method and fermented with selected yeasts, then kept three months on its fine lees with regular stirring for texture.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, salads and poultry and pork.
